Food Obsessions: French Macarons

Hey guys!

It is finally March and Daylight Saving Time is around the corner (on Sunday, March 9th)! We lose an hour of sleep. : ( What are your plans for March? Currently, I am waiting for college letters. Ugh, just thinking about it makes my stomach turn. I already heard from one college but I am still anxious. Part of me wants to stay in California but the other part wants to get out.

Anyway, recently I have been getting obsessed with a certain food: French macarons.

They are insanely adorable and I always wanted to try some so I thought, why not?
In honor of my father's birthday, I decided to bake these. I will admit, these cookies were DIFFICULT. When I first made them, they flattened out into little disks. After two batches, the third one turned out decent. Third time's a charm, right? Well, about 40% turned out decent; the rest cracked.

I never tried macarons before so I was surprised by how much sugar the recipe called for. The cookie itself was sweet enough to stand alone on its own, maybe even too sweet. To balance this, I created a slightly tart buttercream filling.

Now I know to some, these aren't that great but I am pretty proud of these. It was a challenge to make them but fun nevertheless. If you like to bake and have never tried making these, I encourage you to try making them! The wide range of colors macarons offer make it the perfect spring treat!
